The menu
Willem Hiele is a restaurant where life and cooking are lived to the rhythm of the seasons. Nature dictates our menu; we work with ingredients of the moment.
Both lunch (12pm) and dinner (7pm) start at a fixed arrival time, the beginning of a journey through the polders. Connection is an extra seasoning in our story, and our chefs take you through the fields, across the grasses and reeds, to the heart of our restaurant, the kitchen.

Available on Thursday* and Friday* afternoons.
On party and bridge days, only the Chef's Experience is served.

Our sommelier is delighted to take you on a journey where you can freely choose and switch between wines, beers, and juices.
Coffee
Tea/coffee are included in the price.
*Except on holidays then we only serve the experience menu of 235 euros pp.
Because of the complexity and signature of our dishes, we can make only very limited adjustments to the menu. Unfortunately, we cannot offer lactose-free, vegetarian or vegan food, or a menu without fish or seafood. Sea, earth, polders and fire are embedded in the DNA of Willem Hiele.
